as this is when they have their characteristic black pepper bite and spicy edge on the finish, characteristics sadly lacking in many Australian Shirazes. The Saint-Joseph Rouge is aged in old oak and seems quite light at first, but then puts on flesh after it has been open for half an hour. A wonderfully aromatic wine breathing black cherries, green and black olives, violets and mixed garrigue herbs. |
