Style: Such an underrated cheese but a revelation once you try it. Cotherstone belongs to the family of cheese called Dales Cheeses. These are lactic, fresh, crumbly cheeses that were made around the hills and valleys of the Pennines, often on quite remote, isolated farms. The texture is moist, succulent and crumbling while the flavours are reminiscent of sour cream or yoghurt with a fresh acidity and delicately savoury, yeasty notes alongside.
